These nutrition-packed cookies with oatmeal, coconut, pecan, blueberry and cranberry bring a smile on everyone&#8217;s face. All of the healthy ingredients add lots of flavor, too.</p>
<p>You can freeze any extra cookie dough on the cookie sheet and place them in freezer bags to store in the freezer until unexpected company calls! The cookie dough freezes perfectly, then they&#8217;re easy to take out and bake with no fuss to speak of.</p>

This smoothie provides a great way to savor the essence of a pecan pie without the actual pie with the unhealthy flour, fat, sugar and other things that are not really good for you.<br />

Disclaimer: You might call this a <em><strong>pecan pie <span style="text-decoration: underline">dessert</span> smoothie</strong></em> since it should be considered more of a dessert than a meal replacement or a healthy way to start your morning. Consume this smoothie in moderation!</p>
<p></br></p>
<p>Here are the ingredients for the <em><strong>Vegan Pecan Pie Smoothie</strong> (serves 2)<strong>:</strong></em></p>
<blockquote>
<ul>
<li>1/4 cup pecans, soaked for 1 hour</li>
<li>2 large frozen banana, peeled and sliced</li>
<li>Vanilla from 1/2 vanilla bean, or use 1/4 teaspoon pure vanilla extract</li>
<li>1/4 teaspoon ground cinnamon</li>
<li>pinch of sea salt</li>
<li>1 medjool date, pitted and soaked for 20 minutes</li>
<li>8 ounces of <a href="http://www.energyhealthteam.com/healthy-homemade-almond-milk/" target="_blank">almond milk (preferably homemade!)</a></li>
</ul>

<p>To prepare this luscious dessert drink, start by adding the liquid to your blender, and gradually add the fruit and other ingredients.<br />
