Then add some some fresh basil and garlic, and simmer slowly for maximum flavor.<br />

If  you want to make it gluten-free, just leave out the macaroni and call it vegetable soup!<br />

Here&#8217;s the list of ingredients for 6 servings:</p>

<li>4 cups diced tomatoes</li>
<li>1 tbsp chopped fresh basil</li>
<li>1/2 tsp oregano</li>
<li>2 carrots, chopped</li>
<li>2 stalks celery, chopped</li>
<li>1/2 onion, chopped</li>
<li>3 zucchini, chopped</li>
<li>1 cup green beans, chopped</li>
<li>3 cloves garlic, minced</li>
<li>1 bay leaf</li>
<li>salt and pepper to taste</li>
<li>1 1/2 cups macaroni pasta</li>

<p>Start with combining all of the ingredients, without the pasta, in a large pot and simmer over a low heat until the vegetables are tender (at least an hour). Then add the pasta and bring to a slow simmer, again, to cook until the pasta is done (approximately 20 minutes). Remove the bay leaf before serving, and enjoy!<br />
