Try this healthy protein-rich &#8220;overnight oats&#8221; recipe if you enjoy eating pumpkin pie and are looking for something delicious for breakfast.<br />

Once you&#8217;ve gathered all of the ingredients, this is easy to make. Just mix everything together in an air-tight mason jar or plastic container, then place in the fridge to soak overnight. This softens the oats so they don&#8217;t need to be cooked or microwaved. You can keep this in the fridge for up to 4 days in an airtight container.<br />

Any oats will work, including instant, steel-cut, and others. Then there are two more key ingredients in this recipe: <em><strong>Greek yogurt</strong></em> (with lots of protein) and <em><strong>pumpkin purée</strong></em>. Use healthy pumpkin purée, not canned pumpkin filling.<br />
