<p>There is something special about the perfectly poached egg in this recipe, with a perfect texture and a yolk begging to be popped. The poached eggs hide below a decadently rich Hollandaise sauce, that then resides on the deliciously salty Canadian bacon. Everything sits atop a toasted fluffy English muffin that soaks up the Hollandaise sauce and the runny yolk from your poached eggs. Pair it with a side of mixed fresh fruit or crispy hash browns and you have a perfect start to the day.</p>
<p><strong>The New Twist:</strong> take classic Eggs Benedict to the next level with <strong>Wilted Spring Greens</strong>!</p>
<p>Here are the ingredients you&#8217;ll need to make 6 servings of delicious <strong>Eggs Benedict</strong> for a memorable breakfast:<br />

1 clove garlic, minced<br />

It only takes 15 minutes to make this quick version of the classic, delicious <strong>Hollandaise Sauce</strong> &#8230; so you can complete your <strong>Eggs Benedict</strong> dish and add this to a variety of other special recipes!<br />
</br><br />
Here are the ingredients you&#8217;ll need:</p>
<blockquote><p>2/3 cup butter<br />
3 pasteurized egg yolks<br />
2 tablespoons lemon juice<br />
¼ teaspoon salt<br />
1/8 teaspoon cayenne pepper<br />
3 tablespoons boiling water</p></blockquote>
<p><em>Now just follow these easy steps:</em></p>
<blockquote><p>1. Melt the butter until evenly melted and begins to steam.</p>
<p>2. In a blender, blend the egg yolk with lemon juice, salt and cayenne until pale yellow.</p>
<p>3. Slowly pour the butter and boiling water into the egg mixture with blender on low setting.</p></blockquote>
<p><em>Your Hollandaise Sauce is ready when the color turns lighter and becomes &#8220;chiffon yellow&#8221;. Adjust the seasonings to suit your taste if you want, then quickly pour over your servings of Eggs Benedict.</em><br />

<em>Refrigerate any sauce that&#8217;s left so you can use this with other meals.</em><br />
