Here’s the recipe for delicious and super-healthy Turmeric & Blueberry Breakfast Muffins with a Granola Topping that’s been perfected to enjoy as a real breakfast rather than as a “breakfast dessert”! It’s limited to ingredients that are normal for a healthy breakfast … so there are no artificial sweeteners. And it’s gluten-free.

The result is a kind of mash-up between a banana pancake, oatmeal, granola and a turmeric lassi. They have a wonderful rich walnut flavor with a turmeric and blueberry twist. They are sweet, although in a perfectly breakfast kind of way.

Eating just one of these muffins leaves you quite satisfied!


TIP: Double the recipe to make a large batch, and freeze some for eating later.
